Course content
We are recognised as world-leaders in food colloids and diet and health. We apply fundamental scientific principles to address issues of food quality, safety and sustainability, diet quality and consumer behaviour, from food production to the consumer’s plate.
Our research is supported by dedicated and experienced technical staff and first-class facilities, allowing us to scientifically develop new processes and products and analyse the quality and composition of foods from the macro- to the nanoscale.
Our research activity is conducted in but not limited to the following areas:
- Digestion and delivery
- Food colloids and soft matter interfaces
- Food safety, food security and global health
- Functional biopolymers for food and health
- Human nutrition and lifestyle interventions
- Novel food design and processing
- Nutritional epidemiology
- Obesity, cancer and metabolic disease
- Simulation and theoretical modelling of food systems

The University’s Language Centre offers the Academic English for Postgraduate Studies pre-sessional course, which teaches the necessary language and academic study skills required for a research degree programme.
